fix readme doc links

Christian Meissl requested to merge cmeissl/gstreamer-rs:fix/readme_doc_links into main

The doc links in the readme files differ from the links in the Cargo.toml files. As the readme files are included in the crate this leads to a mismatch on crates.io where the direct documentation link will show a different version as the link in the readme. For example the readme docs for gstreamer-webrtc will not include WebRTCDataChannel.
