aws: tests: use unicode escapes for unicode characters

.. instead of putting actual multi-byte unicode characters into the source code which appears to make hotdoc unhappy.

My problem is in GStreamer 1.22 / plugins-rs 0.9 branch btw, so I can also rebase this on top of the 0.9 branch, but I think this is a good change in any case.
