Add (header) usage documentation

Pekka Paalanen requested to merge pq/libdisplay-info:mr/headerdoc into main

Three misc things:

  • add a missing include in libdisplay-info/info.h
  • note that tests depend on specific version of edid-decode
  • document usage expectations between low-level and high-level APIs

The last one could be controversial.
