gitlab CI: Update to latest CI templates
Current template fails to rebuild the CI container with the current Debian stable release (a new release since the last update)
Fixes CI failures seen in https://gitlab.freedesktop.org/xorg/lib/libxi/-/jobs/50250371 and !14 (merged)
