Clarify what 'member' means, and how to add/remove them

Daniel Stone requested to merge daniels/wayland-protocols:member-handling into main

We were using 'member' to generally mean 'member project', but this wasn't super clear, and sometimes it also meant an individual person. Clarify it such that project vs. individual is clear where it's relevant, leaving 'member' only for when it's not relevant.

After doing that, it was pretty clear that, whilst we specified how projects should come and go quite well, changing points of contact was just left implicitly as 'probably the same thing, maybe?'.

Then it turns out that we were still suggesting people send messages to a mailing list no-one ever really uses, and it turns out we already have this exact mechanism in GitLab anyway.

Nothing material here, just a bunch of mundane housekeeping.
