conf: escape @DEFAULT_SINK@

Variables enclosed with @ are replaced with the value of the variable. The sink.name should remain @DEFAULT_SINK@.

Escape the enclosing @ to prevent substitution of DEFAULT_SINK with an empty string while generating pipewire.conf.
