Looking for help with Sony Inzone H9

Description of Problem:
I got this headphones recently and tested them on Windows first. There are a couple if things I'm not sure on how to configure. They are connected through a USB dongle (Not Bluetooth)
- The surround sound
If I run aplay -L
I see it as surround71 compatible:

On pavucontrol I can select up to 5.1 but the moment I do the headphones start making loud noise continuously:
Am I missing something else here?
- The double output
This headset (On Windows) shows up as 2 output devices. The idea is that it has 2 sinks (One called voice, and the other game), to channel voice chat and the game to each, and from the headset controls, it balances the volume from both channels (Which I think it's a pretty neat feature)
I just see it as a single output device on the computer.
