Change upcast API and use proxy signals in pw-mon

Guillaume Desmottes requested to merge gdesmott/pipewire-rs:proxy-remove into master

While trying to finish the pw-mon implementation I realized that the current proxy API was not easily usable.

@ryuukyu : what do you think of those changes? I'm opened to suggestion if you have a better idea. :)
