Make using waffle as a meson subproject work

Dylan Baker requested to merge dbaker/waffle:meson-subproject into master

Currently using waffle as a subproject doesn't work, because waffle installs its headers into $includedir/waffle-1, but in tree they're stored as include/waffle, making it impossible to use as a subproject and an external dependency at the same time.
