zink/ci: enable RADV_PERFTEST=shader_object for polaris10

Samuel Pitoiset requested to merge hakzsam/mesa:zink_ci_eso_polaris10 into main

Passing in CI. Other jobs need a bit more attention but they are also really close to pass as-is (ie. without any new flakes).
