ci: add --project option to ci_run_n_monitor.py

Helen Mae Koike Fornazier requested to merge helen.fornazier/mesa:run_n_monitor into main

Now that we have drm-ci, add --project, so the script can also be used to linux (and any other projects).

Let the default to "mesa" so it can keep behaving as before when the option is not given.
