docs: misc cleanups

Here's another round of misc cleanups to the docs.

It's mostly about consistency and avoiding needless jargon, but also has a few corrections and other updates in there.

It's a bit all over the place, but I felt like splitting this up in a bunch of MRs would just be messier.
