identity: fix "handoff" signal docs

Tim-Philipp Müller requested to merge tpm/gstreamer:identity-handoff-signal-docs into main

The docs list an extra pad argument, which doesn't match the actual signal function signature. Probably a copy'n'paste mistake when copying things from fakesink.
