player/gir: Trust annotation nullability and remove all overrides

Draft MR to get insight in the changes made when trusting gir files for the player. This diff hopefully sheds some weight when gst-plugins-bad!2197 (merged) lands, but we'll have to see how to backport that to 18.x first, if at all.
