gstreamer: Add accessors for `PadProbeData`s on `PadProbeInfo`

Sebastian Dröge requested to merge slomo/gstreamer-rs:pad-probe-data-accessors into main

And make use of it in examples and other code.

This allows to simplify usage a bit in most cases.
