rtspsrc: Fix more signals

the select-stream signal is registered with G_SIGNAL_RUN_CLEANUP, so the default handler always runs at the end (returning TRUE).

unless I'm missing something this signal has never worked, maybe we could modify the "Since" annotation too, or add a warning
