* m4/gst-check.m4:
Use $PKG_CONFIG rather than pkg-config directly, the one in our path
might not be the one we want, like when cross-compiling. Also, other
macros such as PKG_CHECK_MODULES use $PKG_CONFIG, so we should
probably too just for consistency. Fixes #405288.
