meson: fix escape char handling in glib recipe

The \ char was lost and useful for aarch64-linux-gnu-* compiler. giomodule.c was failing because of -DGST_SDK_GLIB_GIO_DISTRO_GIO_MODULE_PATH=\"path\" malformed
