Occasional reboots/freezes when launching microsip under wine or zoom

On launching zoom or microsip (which uses wine for Linux support), I sometimes get system reboots or freezes. This happens around once a fortnight on average but can happen repeatedly making the applications unusable. Occasionally I have had reboots while a zoom session is in progress.
When the machine freezes it cannot be accessed by SSH and it is not possible to regain control using the SysRq keys or shut down with ACPI. When it reboots no intervention is possible, other than to select a different install so fsck can be run on all partitions. Unfortunately this makes it near-impossible to capture dmesg as it is not practical to write intensively to an SSD all the time and it is impossible to predict when this will occur. Afterwards, of course, dmesg no longer exists.
However, the less useful /var/log/messages shows an intense burst of errors involving nouveau:messages. I don't know whether this contains enough information to identify the cause, but it's all I have.
