alsa-mixer: add environment variables for profiles and paths

This is a small change to allow the alsa-mixer profile set and path directories to be set using environment variables. This allows users to use custom profile sets without having to edit the system-wide configuration. It also allows distros and admins to easily change the location of this configuration, which is useful for non-FHS distros.
