util: Cleanup the usage of the MESA_TRACE_ macros

What does this MR do and why?

  • Use the MESA_TRACE_SCOPE macro as much as possible
  • Remove the unused tracing categories
  • Remove the now unused MESA_TRACE_BEGIN/END
