Solved!
I had ERTM disabled in the kernel because of the Xbox Gamepad Driver
I enabled it
echo 0 > /sys/module/bluetooth/parameters/disable_ertm
systemctl restart bluetooth
And now it works flawlessly

AFAIK it syncs both. In windows, changing the volume in the speaker raises and lowers software volume.
I edited the unit service in systemd, added the -d flag, restarted the server and paired it again. This is the log. At the end the message is kinda the same. EDIT: Moving the big log to a file
